Cool as a Cucumber

This week we have been learning about the benefits of ginger root and ways of incorporating it into new recipes. Here is a great recipe that I tried for lunch today with cucumbers.

Cucumbers are mostly composed of water, but believe me–they pack a lot of nutrition!  The flesh of cucumbers is a very good source of vitamins A, C, and folic acid. The hard skin is rich in fiber and a variety of minerals including magnesium, silica, molybdenum, and potassium.   These minerals contribute to the strength of our connective tissue—connective tissue is what holds our body together. 🙂

Cucumbers are great for alkalizing the blood, so try this idea for a budget friendly and body balancing snack:


  • 2 large cucumbers
  • 1/3 cup rice vinegar
  • 4 teaspoons white sugar
  • 1 teaspoon sea salt
  • 1 1/2 teaspoons minced fresh ginger root


  1. Cut cucumbers into very thin slices.
  2. In a small bowl combine vinegar, sugar, salt and ginger. Mix well. Place cucumbers inside of the bowl; stir so that cucumbers are coated with the mixture. Refrigerate the bowl of cucumbers for at least 1 hour before serving.
